Do you have to block in or can you just start painting?

I use the block-in to cover the white of the canvas because it is more difficult to judge the tone (darkness or lightness) or the hue (colour) when comparing them on a large area of white. The block-in makes the mixing of proper colours for the oil layers easier. It also allows me to apply only very thin layers of oil paint.
